- 2 pounds chicken breast
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 cups quartered and seeded tomato medley (grape tomatoes)
- 1 cup torn baby spinach, fresh
- Balsamic vinaigrette to taste
- ½ cup torn basil, fresh
- Olé Quesadilla Cheese, shredded
- 6 (8-inch) Olé Xtreme Wellness Tomato Basil Tortillas, warmed according to directions
Instructions
- Season chicken with salt and pepper and grill or pan-fry until thoroughly cooked. Allow chicken to rest for at least 10 minutes before cutting into strips.
- Place tortillas flat on serving dish. Layer remaining ingredients on one side of wrap and roll up. Repeat with remaining wraps. Cut in half when ready to serve.
